¼ cup butter
¼ cup chopped onion
¼ cup flour
1 can 14½ oz. chicken broth
1 can evaporated milk
3 small baking potatoes, baked or microwave
Salt and pepper to taste
Shredded cheddar cheese
8 slices of bacon cooked until crispy and crumbled
Green onions sliced

Directions:
Melt butter in saucepan over medium heat. Add onion and cook 1 - 2 minutes until tender. Stir in flour. Gradually stir in broth and milk. Scoop potato pulp out and break into small pieces. Add to chicken broth mixture. Add salt and pepper. Cook over medium heat until comes to a boil. Heat through and sprinkle top with crumbled bacon, shredded cheese, and green onions.
