Grape seed oil for frying

8-10 Pieces Chicken legs or thighs
6-8 Mild or Hot Fresh sausages
2-3 Large Bell peppers, sliced
2 Stalks Celery, cut into 1" pieces
2 Onions, cut into 1" pieces
2 Carrots, cut into ¼" Slices
6 Cloves Garlic, crushed
¼ Cup Parsley, chopped
1-2 Cups Chicken stock
2 Tbsp Dried basil
1 Cup White wine
Salt, pepper and thyme

STEP 1

Season the chicken. Heat oil in a large oven proof frying pan. Brown pieces on both sides. Remove to plate. Use same pan to fry the sausages. Remove to plate.

STEP 2

Add carrots, celery, onion, and garlic to pan and cook for 10 minutes. Add peppers and basil and cook for 5 minutes more. Add the stock and wine and bring to a boil. Remove from heat. Tuck the sausages into the vegetables and place the chicken pieces on top. Bake in a 350º oven for 20 minutes. Remove from heat and sprinkle with parley. Serve directly from pan.
