2 T. extra virgin olive oil
3 garlic cloves, minced
1 lb. large shrimp, peeled
⅓ c. crumbled feta
juice of ½ lemon
1-2 T. capers
¼ t. coarse salt
Freshly ground black pepper
2 T. chopped fresh basil

Directions:
Directions:
Heat olive oil in large skillet over medium heat. Add garlic and cook, stirring until fragrant but not browned, about one minute. Stir in shrimp, feta, lemon juice, capers, salt & pepper. Continue stirring over heat until shrimp become just opaque and sauce begins to thicken, about 2 minutes. Add basil and stir to combine.
