8 ounces mushrooms, very finely chopped
1 medium onion, peeled and finely chopped
2 garlic cloves, peeled and minced
1 tbsp oil
fine sea salt
ground black pepper
1 tbsp Worcestershire sauce
7 tbsp ketchup, divided
1 cup panko bread crumbs
⅓ cup milk
2 large eggs, lightly beaten
1¼ pound ground turkey

* Heat oven to 400º. Lightly oil rimmed baking sheet (or 9x13 pan) lined with foil.
* Heat oil in large skillet over medium-low heat. Add onion and cook, stirring occasionally, until softened, about 5 mins. Add garlic, cook until fragrant, about 1 min. Stir in mushrooms, ½ tsp salt, and ¼ tsp pepper. Cook until mushrooms give off their liquid and it boils away; about 10 mins.
* Transfer onions and mushrooms to large bowl; stir in Worcestershire and 3 tbsp ketchup. Set aside for 5 mins.
* Meanwhile, combine breadcrumbs and milk in a small bowl. Stir breadcrumb mixture and eggs into mushrooms and onions. Using a fork or your hands, gently mix in turkey, ½ teaspoon salt and ¼ tsp pepper. The mix will be very wet.
* Form meatloaf into a 9x5" oval in middle of prepared baking sheet. Spread 4 tbsp ketchup on top.
* Bake until thermometer inserted into thickest part registers 170º, about 50 mins. Let stand 5 mins before slicing.
