6 c sliced summer squash
1 c sour cream
1 can cream of chicken soup
1/2 c chopped onions
1 c shredded carrots
1/2 c melted butter
1 sm pkg herb stuffing (Pepperidge Fams)

Directions:
Directions:
Cook squash and onions 5 minutes. Drain.
Melt butter and mix with stuffing.
Line a 12 x 7 pain with half of the stuffing.
Combine the rest of the ingredients and pour into casserole. Use remainder of stuffing on the top.
Bake 25-30 minutes at 350.

This can be made a day ahead and put in the fridge or freezer for future baking. Allow extra baking time if taken from the fridge or freezer.
