Fluffy Bisquick Pancakes Recipe

2 cups Bisquick
1 cup milk
1 Tablespoon sugar
2 Tablespoons lemon juice
2 teaspoons baking powder
2 eggs

Directions:
Directions:
Whisk the eggs and add milk and lemon juice.
Combine Bisquick, sugar and baking powder.
Add liquid all at once to dry mixture, mixing only until well combined. Do not over mix.
Pour pancakes onto hot griddle and wait for small pores to appear on the pancake. Turn at that point...but only once. That keeps the pancakes tender instead of tough!!

I add sliced bananas, berries to the top of the pancakes and serve with syrup.

To make the pancakes more nutritious, I frequently add 1/2 cup oats and/or 1/2 cup wheat germ. If I use both, I add another egg and more milk.
