24 sweet potato patties
1 lb. can chunk pineapple
1½ c. light brown sugar
2 T. butter
1½ T. cornstarch
⅛ t. cinnamon
¼ t. salt
1 T. fresh grated orange peel
½ c. pecan halves

Directions:
Directions:
Preheat oven to 375º. Drain pineapple and save juice. Place potatoes in 13x9 baking dish. Combine dry ingredients, orange peel, & 1 c. pineapple juice in pot and boil for 2 minutes. Add pineapple chunks, butter and pecan halves. Bring to boil again and pour over potato patties. Bake for 25 minutes, uncovered.

This recipe is a good alternative to the normal sweet potato casserole, and you can decrease or increase it according to crowd size. The sweet potato patties are usually in the freezer section at grocery store with other veggies.
