2 T. vegetable oil
2 c. self-rising cornmeal mix (I use Sunrise)
1 c. self-rising flour
2 eggs, beaten
1 - 1½ c. buttermilk
½ - 1 c. regular whole milk

Directions:
Directions:
Preheat oven to 400º. In large bowl, combine all ingredients. Put oil in iron skillet and heat the skillet in the oven until very hot. Pour in cornbread mixture and bake for approx. 20 minutes or until golden brown. Melt some butter on top, slice, and serve.
