3 racks Baby Back Ribs

BBQ Rub

In a plastic container combine
¼ c Paprika
2 T each Packed Brown Sugar, Chili Powder, Cumin
1 T each Salt and Pepper
1 t Cayenne Pepper

Sprinkle both sides of the ribs w/ the rub. Wrap tightly in plastic wrap and place on large rimmed cookie sheet. Refrigerate 4 hours or overnight.

Preheat the oven to 300*

Unwrap the Ribs and place back on the cookie sheet. They will slightly overlap. Cover loosely with foil and bake 1 hr. Uncover the ribs and brush liberally on both sides with my recipe BBQ sauce. Bake uncovered for 2 hours or until ribs are very tender. Remove from oven and baste with more sauce and place on BBQ for 5 -10 min. or under the oven broiler until hot, glazed and browned.

Can be baked in the oven earlier in the day and put on the BBQ right before serving.
 

BBQ Sauce

2 thick cut bacon slices
4 sprigs fresh thyme
½ onion peeled and uncut
3 smashed garlic cloves
2 c ketchup
1 c peach preserves
2 T dijon mustard
2 T Brown Sugar
¼ c molasses
2 T red wine vinegar
1 t cumin
1 t paprika

Wrap the bacon around the tyme sprigs and tie with kitchen twine. Heat 3 T vegetable oil in a large pot over medium heat. Add the bacon bundle and cook slowly for 3 to 4 min to render the bacon fat. Add the onion and garlic and cook slowly, for 5 min until softened. Add all of the rest of the sauce ingredients and stir. Turn the heat down to low. Cover and cook slowly for 20 min. Remove the bacon bundle, onion and garlic. Take about one cup of sauce for basting the ribs. Reserve the rest of the sauce for the table.

These ribs are out of this world. They are worth the effort to make them. The last time I made them I made too much and so my friends came back the next night for leftovers.
