1 (10.5 oz) can condensed cream of potato soup
1 (10.5 oz) can condensed cream of mushroom soup
1/4 chopped white onion
1 T Dijon mustard
1/2 tsp black pepper
3 lb Yukon Gold potatoes, thinly sliced
12 oz shredded cheddar cheese (3 ups)

Directions:

1. Preheat oven to 350º. Grease 9x13 inch baking dish.
2. Stir together soups, onion, mustard, and pepper in a bowl. Heat in microwave until hot, about 2 minutes.
3. Put a third of potato slices in prepared baking dish. Cover with one third soup mixture and 1 cup cheese. Repeat twice.
4. Bake, covered, 1 hour, 10 minutes. Uncover and bake until potatoes are fork tender and cheese is browned on top, 15 to 20 minutes more. Let stand 10 minutes before serving. Sprinkle with additional pepper.
