6 boneless, skinless chicken breasts
flour for dredging
5 tbsp olive oil
1 large sweet onion (Walla Walla Sweet or Vidalia)
1 large green bell pepper
1 large red bell pepper
1 tbsp minced garlic
2 15 oz cans diced tomatoes
1 6 oz can tomato paste
1 large bay leaf
2 tbsp chopped fresh basil (or 1 tbsp dried basil leaves)
1 tbsp chopped fresh oregano (or 1/2 tbsp dried oregano)
1.2 tsp salt
1 tsp sugar
1/2 tsp ground black pepper
1/2 tsp crushed red pepper flakes

Peel onion and slice in 1/2" slices, cut each slice in half and separate layers, set aside. Seed peppers and cut into 1/2" strips, set aside. In a large Dutch oven pour 3 tbsp olive oil and place over medium high heat. Add minced garlic and sauté for about one minute, then remove garlic from pan and set aside, you will add it back later. Dredge chicken breast lightly in flour and place into pan. Brown chicken pieces evenly on each side, then remove and set aside. Add another 2 tbsp olive oil to the pan, then add onions and peppers and stir and cook until onions are translucent but not brown. Add tomatoes, tomato paste, reserved garlic, oregano, basil, salt, pepper, sugar, red pepper flakes and bay leaf to the pan and stir until combined. Bring to a boil..Add chicken pieces. Return to a boil, then lower the heat until mixture is just barely simmering.. SImmer for 25 to 30 minutes.

Serve with your favorite pasta. We love this with angel hair pasta.
