Brownie layer:

2 cups white chocolate chips
1/2 cup butter
1/2 cup sugar
3 eggs
2 teaspoons vanilla
1 teaspoons peppermint extract
1-1/2 cups flour
1-1/2 cups mini chocolate chips

Creamy Layer:

1 cups white chocolate chips, melted
1/2 cup room temperature butter
3-1/2 cups powdered sugar
1/3 cup sour cream
1/2 tsp vanilla
1 tsp peppermint extract
1/4 teaspoon salt
1/4 cup crushed peppermint candy canes

For brownie layer: melt together the white chocolate chips and butter, start with 1 minute in the microwave, adding 20 seconds more at a time just until chips are melted and mixture can be stirred smooth. Stir in sugar, eggs, vanilla and peppermint extract. Add flour and stir until combined. Pour batter into a greased 9” x 13” pan. Bake at 350º until edges are slightly brown and middle is set. As soon as you remove it from oven, sprinkle chocolate chips over top evenly. Let cool completely.

For the creamy layer: cream together the butter and half the powder sugar. Beat in the sour cream, vanilla, peppermint extract . Beat on low until smooth. Add the melted and cooled white chocolate and the remaining powdered sugar. Beat on high until smooth and fluffy, about 2-3 minutes. Spread over brownie layer, pressing down to insure topping gets onto top of brownie layer and in between mini chocolate chips (this keeps the fluffy peppermint layer from sliding off the brownie layer. Sprinkle with crushed candy canes. Chill for about an hour before cutting. Keeps best in refrigerator.
