Oatmeal Carmelitas Recipe

3 cups quick oatmeal, divided
1 tsp baking soda
1 ½ cups brown sugar, packed
1 ½ cups melted butter
½ tsp salt
1 ½ cups chopped walnuts or pecans
2 cups semi-sweet chocolate chips
1 ½ cups caramel ice cream topping
3 tbsp flour

Directions:
Directions:
Combine flour, baking soda and salt. Mix in 2 cups oatmeal. Pour in melted butter, mix well. Press one half of this mixture into a 9” x 13” pan (I like to line the bottom and two long sides with parchment paper, leaving the ends hanging over a bit so I can lift the bars out of the pan and cut them on a cutting board). Bake at 350º for 10 minutes. Meanwhile, add the remaining one cup oatmeal to mixture, it will be crumbly, and set aside. Remove crust from oven and let cool for 5 minutes. Sprinkle chocolate chips and chopped walnuts evenly over crust. Whisk together caramel topping and 3 tbsp flour until smooth and drizzle evenly over chocolate/nut layer. Crumble remaining crust ingredients evenly over caramel layer. Return to oven and bake for 15-20 minutes, until light golden brown. Do not over bake, they will get very hard.
Let cool completely before cutting into bars.
 

Gluten Free Carmelitas

2 cups Namaste Gluten Free flour (or other gluten free flour mix that include xantham gum)
3 cups gluten free oatmeal, divided (regular oatmeal does not guarantee it is gluten free, so if you are making these for someone who has a health condition that is sensitive to gluten, buy gluten free oats)
1 tsp baking soda
1 ½ cups brown sugar, packed
1 ½ cups melted butter
½ tsp salt
1 ½ cups chopped walnuts or pecans
2 cups semi-sweet chocolate chips
1 ½ cups caramel ice cream topping (read the label and make sure it is gluten free)
3 tbsp corn starch
