1.5-2 lbs of beef chuck (cubed) OR beef ribs with lots of meat (small cut)
7 c water
2 c water
3 cloves of garlic
1 sliced small onion
2 tomatoes quartered
2 large (or 3 sml) potatoes, quartered
2-3 stems broccoli (or more if you like)
½ lb green beans
½ lb spinach
¼ lb cabbage, cut in large chunks
1 pkg Mama Sita’s “Sinigang sa Sampalok Mix”
Fish Sauce to taste
Salt/Pepper to taste

Directions:
In deep pot, brown meat, set aside.
Add 7 cups water, then slow cook on medium-low temperature for 90 minutes, lower temperature if it starts boiling furiously.
Set aside to cool. Excess oil/fat will rise to the top. Remove as much as possible. Set aside.

In another soup pot:
Sauté 3 cloves garlic in 4 tbsp oil
Add onion, saute until tender
Add 2 cups water and quartered tomatoes
Let simmer, Turn heat to high.

Portion out 7 cups of beef broth from the other pot into the soup pot.
Add potatoes. When it boils, add sinigang seasoning mix, fish sauce, salt and pepper to taste. Let simmer until potatoes are soft, but firm. Reduce heat to medium and add broccoli and beans. Simmer for 5 minutes. Add cabbage and spinach, simmer for 5 minutes. Add warm, slow-cooked beef from the the other pot.
Let simmer for 5 minutes. Turn off heat and let sit for 10 minutes before serving.
Serve with rice.
