1 lb. - mild sausage
4 slices - bacon, cut into 1" pieces
1 cup - onion, finely diced
3 cloves - garlic, minced
6 cups - chicken broth
5 each - russet potatoes, skin on, thinly sliced
1 tsp. - crushed red pepper flakes
4 cups - chopped kale
1½ cup - heavy whipping cream
salt & pepper to taste
parmesan cheese for garnish

Directions:

Brown the sausage in a large pot or Dutch oven. Remove with a slotted spoon and set aside. In the same pot, cook the bacon until crispy. Stir in onion, cook for 5-6 minutes or until the onion is translucent. Add in garlic, cook for 1 minute, stirring frequently. Pour in chicken broth and crushed red pepper flakes. Add in the potatoes and sausage, bring to a simmer. Cook until potatoes are tender, about 10 minutes. Add the kale and simmer for 3-5 minutes. Stir in the heavy whipping cream.

Garnish with parmesan cheese if desired.
