1 to 2 Tbsp olive oil or vegetable oil
1 red onion, thinly sliced
1 medium tomato, diced
1 tsp sugar
1 Tbsp balsamic vinegar
salt and pepper to taste

Directions:
Directions:
Heat a drizzle of oil in a large pan over medium heat. Add onion and cook, stirring until softened, 4 to 5 minutes. Season with salt and pepper. Stir in tomato, sugar, and vinegar. Cook, stirring until soft and jammy, 4 to 5 minutes. Season with salt and pepper. Turn off heat, remove jam from pan and empty into a small bowl for serving. This is a great topping for hamburgers!
