Cornbread for Dressing


Ingredients:

1 c. flour
2 c. yellow corn meal
¼ c. sugar
6 - 8 t. baking powder
1 t. salt
2 eggs
2 c. milk or buttermilk
1/2 c. shortening, melted

Directions:
Directions:
Mix dry cornbread ingredients in large bowl. Mix other cornbread ingredients together, then slowly add to dry mixture until well combined. Pour into greased 8x12 pan and bake at 400º for 25 min.
 

Dressing

crumbled cornbread
1/2 to 1 c. cooked rice
4 stalks celery, diced
1 pkg. green onions, chopped
2 sticks butter
1/2 cup milk
4 eggs, whipped lightly
about 6 c. chicken broth
salt, pepper
2 t. poultry seasoning

Directions:

Crumble cornbread. Sauté celery and green onions in butter. Combine cornbread, celery & onions, and all other ingredients in large bowl and mix well. Mixture will be very soupy. Pour into casserole dish and cook about 45 min. at 350º or until toothpick inserted in middle comes out clean.
