1 head iceberg lettuce
1/3 head romaine lettuce
1 cup artichoke hearts (the canned ones, not marinated)
1 cup sliced red onion
1 cup. diced pimentos, drained well
2/3 cup freshly grated parmigiano cheese
2/3 cup olive oil
1/3 cup red wine vinegar
1 t. salt
1/4 t. black pepper

Wash lettuce, allowing all the water to drain completely. Tear lettuce into pieces. Do not use a knife on lettuce! Put lettuce in large bowl. Drain artichokes well and add to lettuce. Do not use marinated artichoke hearts. Peel and slice onion, drain pimentos completely. Add to lettuce and toss with the parmigiano cheese. Chill until ready to serve. For dressing, mix olive oil, vinegar, salt & pepper together. Just before serving, toss with dressing.

Note: I prefer to use dressing made from Good Seasons Italian mix. (with olive oil and red wine vinegar). Also - I like romaine better than iceberg lettuce so use about a 50/50 mixture. Or sometimes all romaine. That's up to your personal taste.

This recipe is from The Pasta House, one of our favorite Italian restaurants in St. Louis. They serve a bottomless bowl. We had many a meal of salad and cheese garlic bread for a great light dinner.
