3 Eggs (See Hint below)
1 Tbsp. Water
1 tsp. Butter
Salt & Pepper
2-3 oz. Shredded Cheese, Meat or veggies, finely chopped
Chives or Parsley as garnish

Directions:
Directions:
Whisk eggs with water and pepper briskly to entrain air. Add salt just before cooking.

Melt butter into 8-10" non-stick skillet over medium-high heat, swirling to coat evenly. Pour eggs into skillet swirling distribute.

Add filling sprinkling around top of eggs. Remove from heat and cover for 5-minutes. If you want slightly browned eggs, leave on heat after covering for 1-2 minutes.

Check to verify that cheese has melted and meat/veggies have set up. Then roll out of skillet onto plate. Garnish with chives or parsley.

Hint: Try using 4-eggs and slightly more filling, then slice omelette for serving.
