½ cup flour
1 cup milk
1 tsp vanilla
2 large, tart apples, like Granny Smith
⅓ cup brown sugar
¼ cup butter
3 tbs sugar
½ tsp cinnamon
½ tsp nutmeg
¼ cup butter
⅓ cup brown sugar

Directions:
Preheat oven to 400 º.
1. Peel core, quarter and cut apples into thin slices - 3 cups. In a small bowl, mix 3 tbs sugar with cinnamon and nutmeg.

2. Cut butter into chunks and place them in a cast iron skillet or 8x8-inch baking dish. Put the skillet or dish in the oven for 3 minutes or until the butter is melted. Remove pan from oven, sprinkle ⅓ cup brown sugar over the melted butter. Carefully spread the apples on top of the brown sugar then sprinkle the cinnamon sugar mixture over the apples.

3. Using blender, mix flour, milk and eggs. Add vanilla and blend until foamy. Let the batter rest for 5 minutes. By now in the oven, the sugar should be bubbling around the apples.

4. Remove the pan from oven and carefully pour batter over apples. Return to oven and bake for 20 minutes or until center is set and sides are lightly browned. The pancake will puff up dramatically but fall once you remove it from the oven. Slide pancake onto serving platter and cut into wedges.
