1½ Cups Long grain rice
½ Cup Onion, minced
2 Cloves Garlic, minced
6 Tbsp Butter
1 Large Red pepper, cut into ¼" cubes
1½ Cups Canned Tomatoes, diced
2¼ Cups Hot Beef stock
1 Cup Sausage, cut into ¼" cubes
1½ Tsp Salt
½ Tsp Pepper
½ Tsp Bay leaves, ground

STEP 1

Soak rice for 30 minutes. Heat 3 tbsp butter in a large pan. Cook onion, garlic, peppers, and sausage for 10 minutes or until soft.

STEP 2

Drain rice. Add to pan along with remaining butter and spices. Cook for 5 minutes. Transfer to a buttered casserole dish and add the stock. Cover and cook at 350º for 20-25 minutes.
