1 lb Jimmy Dean sausage, I use mild but choose to taste

About 1/3 bag (from the vegetable section of the grocery store) or to taste

About 2 cups Brown rice (follow bag/box directions)

Eggs

Butter
Salt/pepper

Optional: feta cheese for topping
Lemon pepper is also good on top

Cook brown rice - this takes longer than white rice

Cook sausage in a large pan, medium heat. In a separate pan, cook the brussel sprouts in butter (about 1/2 cup/1 stick). I like them to have some browning on them. Add salt and pepper to taste

Add the sausage and mix together.

Add brown rice to a bowl, add sausage/brussel sprout to the rice, top with an over easy egg and enjoy
