1 dozen eggs
1 pkg. Jimmy Dean Hot sausage, cooked
2 cups small curd cottage cheese
1 lb. shredded cheddar cheese
1/2 cup sifted flour
1 teaspoon baking powder
1/4 cup butter, melted
Tabasco or any hot sauce, according to your taste
Salt and Pepper to taste

Preheat oven to 400º. Prepare a 9x13 baking dish with cooking spray. Beat eggs, salt, pepper and Tabasco sauce in mixer. Add flour, baking powder, cooked and crumbled sausage, shredded Cheddar cheese, cottage cheese and melted butter. Beat well. Pour mixture into prepared baking dish and bake for 20 minutes. Reduce heat to 350º and bake for another 30 minutes or until a knife inserted in center comes out clean.

This recipe can be made the night before and stored in the refrigerator until ready to bake.

Beverly suggests that if "hot" sausage is too spicy, substitute regular sausage or use 2 cups of cooked, chopped ham or bacon.
