1 lb of salt pork
10 legs and 3 breasts of chicken
1/4 # of butter
1 large onion
2 cans of sliced mushrooms
2 cups of red wine
1 bay leaf
1 tsp thyme
2 cans chicken broth
2 8oz tomato sauce
4 tablespoons flour
Directions:
Directions:
Skin and dice port. Put in a saucepan, add water to cover. Bring to boil, cook 10 min, then drain.

Cook pork in a large skillet over med. heat until brown.

Remove the cooked pork to a large pot, add butter to fat in pan.

Add onion and mushroom` Cook 3 minutes.

Add chicken pieces, brown chicken, remove pieces as they brown.

Put in pot with pork pieces, mushroom and onions.

Add wine. thyme and bay leaf.

Cook 15 minutes uncovered.

Add broth and tomato sauce.

Cover and simmer 20 min or until chicken is tender.

Arrange chicken in serving dish (keep warm).

Bring sauce to boil, blend flour, stir into sauce, cook about 2-3 minutes.
