1/2 cup butter
2 cups sugar
1/2 cup milk
3 tbsp cocoa powder
3 cups oatmeal (quick)
3/4 cup creamy peanut butter
1 tsp vanilla extract

Directions:
Lay a large sheet of parchment paper or wax paper on your counter. Measure and have ready the peanut butter, oatmeal and vanilla. Combine butter, sugar, milk and cocoa in a large saucepan..Cook over medium-high heat to bring to a boil. As soon as the mixture begins to boil begin timing and cook for EXACTLY one minute (longer will result in grainy cookies). Remove from heat and add peanut butter, oatmeal and vanilla, stir well to combine. Working quickly, drop by tablespoonsful onto the parchment paper. Let set until cool and firm. Do not need to be refrigerated.

My mother-in-law, Kathryn Hemberry, made these often. Jim and my boys love them, and they always say that these are the one thing that Grandma made that she made better than I do. (Could it be because she used margarine instead of butter? I don't know, I think they are delicious either way.
