1 pkg. - pork tenderloin, 6oz portions (typically 4-6 portions)
1 - shallot, finely diced
1 tbsp. - fresh rosemary, chopped
½ cup - chicken broth
3 tbsp. - balsamic vinegar
4 tbsp. - fig jam
2 tbsp. - butter

Directions:

Preheat oven to 450º F.

Remove the silver skin from the pork tenderloin, then portion into 6oz pieces (approx. 3-4" long). Pat pork dry with paper towels. Season all over with salt and pepper.

Heat a drizzle of olive oil in a large pan over medium heat. Add pork and sear, turning occasionally, until browned all over (4-8 minutes). Transfer pork on to a baking sheet and roast in the oven for 10-12 minutes. Let rest for a few minutes after removing from the oven.

To make the sauce, heat a drizzle of olive oil in pan used to cook the pork. Add shallot and chopped rosemary. Cook, stirring, until softened, 1-2 minutes. Stir in chicken stock, vinegar, and jam. Simmer until thick and saucy, 2-3 minutes. Remove pan from heat and stir in butter.

Slice pork and top with sauce.
