2 cups - sugar
1½ cup - oil
4 each - eggs
1 tsp. - vanilla
2 cups - sifted flour
2 tsp. - baking soda
1 tsp. - baking powder
¼ tsp. - salt
1 tsp. - cinnamon
1 tsp. - all spice
3 cups - raw carrots, finely grated
½ cup - chopped pecans

Frosting:
1 16oz pkg. - powdered sugar
1 8oz pkg. - cream cheese, softened
1 stick - butter, softened
½ cup - chopped nuts

Directions:
Directions:
- Preheat oven to 375º F.
- In a large mixing bowl cream the sugar and oil together. Add in the eggs and vanilla. Slowly mix in the flour, baking soda, baking powder, salt, cinnamon, and all spice until combined. Stir in the carrots and pecans.
- Pour cake batter evenly in 3 greased and floured 9" round cake pans.
- Bake for 30 minutes. Let cool.
- To make the frosting combine the powdered sugar, cream cheese, butter, and vanilla.
- Frost the cake once cooled. Garnish with chopped nuts.
