24 Mushrooms (about 1 pound), Remove Stems and Chop Them
1 Large Garlic Clove, Minced
1/2 Cup Finely Chopped Onion
4 Tblsp Olive Oil
1/2 Cup Finely Chopped Prosciutto (about 3 ounces)
1/4 Cup Dry Bread Crumbs
3 Tblsp. Parsley
3/4 Cup Parmesan Cheese
1 Large Egg, Slightly Beaten
Salt and Pepper to Taste

Directions:

Preheat oven to 400º.

Saute chopped mushroom stems, garlic, and onion in 2 tablespoons olive oil, stirring for about 8 minutes or until tender. Add prosciutto, bread crumbs, 1/2 cup cheese, egg and salt and pepper to taste. Stir until mixture is combined well. Fill mushroom caps, mounding slightly, and place in a single layer in a lightly greased shallow baking dish. Sprinkle with remaining cheese, drizzle with 2 tablespoons olive oil. Bake for 12-15 minutes.
