7.5 - 8 lb standing rib roast
6 or 7 fresh garlic cloves
1/4 c kosher salt
lots of freshly-ground black pepper
4 c beef stock
fresh thyme sprigs
2 c red wine

Directions:
Directions:
Preheat oven to 425.

Peel garlic and cut into slices - somewhat thick.

Cut slits into the meat, and insert the garlic cloves all over. Mix the kosher salt with the black pepper to and a dab of evoo to make a crust. Rub really well into the meat - like a massage.

Roast in a heavy roasting pan for 30 minutes at 425, then reduce heat to 375. for medium, cook 14 minutes per lb. (about 2 1/2 hours for 7.5 lbs)

When meat is done, remove from pan, and put pan with drippings over stove. Stir in 2 c red wine - reduce by 1/2.

Stir in beef stock and fresh thyme, and reduce by half.

Serve with the sauce to pass.
