1 c butter, softened to room temp
3 1/2 c confectioner's sugar
1/3 - 1/2 c unsweetened natural or dutch-process cocoa powder
3 T heavy cream or milk (I use milk)
1/4 t salt
2 t pure vanilla extract

Directions:
Directions:
Beat butter until creamy. Add the rest of the ingredients and beat until smooth and creamy. Add more milk or conf. sugar if necessary to get the right consistency.

This will keep in the fridge for 1 week if covered tightly or 3 months in the freezer. To thaw from frozen, put in the fridge, then re-beat.
