3 T. canola oil
2 T. garlic, crushed
½ c. onion, minced
1 c. cubed red, ripe tomatoes
3-4 lbs. boneless chicken, cut into serving pieces
1 T. peppercorns
⅛ tsp. freshly ground pepper
2 bay leaves
¼ c. vinegar
1 T. paprika
1 c. water
salt to taste

Directions:
Directions:
In medium pan, heat oil and sauté garlic until light brown; add onion and wait until transparent before putting in tomatoes. When tomatoes turn soft, add chicken, peppercorns, pepper, bay leaves, vinegar, paprika, water and salt.

Lower heat and simmer until meat is tender, approx. 30 minutes.

Serve with white rice.
