a swirl of evoo
1 lb stew meat or italian sausage
salt, pepper, garlic salt, basil, cayenne pepper to taste
frozen chopped onions (or fresh) and/or frozen stir-fry veggies,
or frozen corn, spinach, peas
celery tops and some of the celery, chopped
1 box chicken broth
1 box soy ginger broth
quick -cooking barley

This is the stew that uses up all the leftover veggies in the fridge, or, you can make it quickly on a cold night with frozen things, if you haven't made it to the store in awhile.

Swirl the oil in the pan, add the meat and seasoning and the onions; cook until the meat is nicely browned and the onions are transparent. In the meantime, put the broth in a big heavy pot, add all other stuff except the barley, and adjust seasonings. Bring all to a boil, then simmer slowly for at least an hour. Add more broth or water if needed. Toss in the barley about 15 minutes before serving.

Top with fresh parsley for serving, if you have it.

This is not so much a recipe as a "throw together" thing! I don't really measure anything, but stews like this are very forgiving!
