1 t each dried (or fresh equivalent) basil, cumin, oregano
salt and pepper to taste
3 c canned crushed tomatoes
2 lb. lean ground beef
1 T chopped garlic (I use jarred)
2 c chopped onion
2 c chopped green pepper (I use some jalepeno if I can get away with it!)
2 T vegetable oil (I use 1)
1 lb elbow macaroni
2-3 c grated cheddar cheese.

Preheat oven to 350.

Cook the macaroni according to directions JUST until al dente; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and saute until soft. Add the ground beef and saute until browned (sometimes I take out the veggies first so they don't get too smushy, if I feel like taking the extra time). Add the spices. Cook down just a bit - 5-10 minutes.

In a large bowl, combine the macaroni and beef mixture. Spread this mixture into a 9x13 inch baking dish. Top with the cheese and bake at 350 for 20 -25 minutes, or until the cheese is lightly browned and bubbly.
