For the crust makes 2
2 2/3 cup flour
1 tea salt
1 tea sugar
1 stick cold butter
1/2 cup frozen solid shortening
6 TAB plus extra if needed ice water
1 tea apple cider vinegar

Mix dry ingredients in bowl, add butter and shortening. Blend with finger tips till course. Add water and vinegar, mix till forms smooth ball. Chill at least 30 min or longer. Divide dough into 2 parts, roll each part between two sheets of parchment paper for 8" or 9" pie crust.
 

Filling

3 lbs apples peeled, cored and sliced. Use a mix of Granny Smith and some type of red.
1/2 cup white sugar
2 TAB brown sugar
1 tea cinnamon
1 tea lemon juice
4 TAB tapioca
2 TAB butter

Directions:
Directions:
mix everything except butter together, pour into bottom pie crust. Add butter in small pieces over apple mixture. Lay top crust over top, pinch edges together to seal, trim off excess crust. Make 4-6 silts in upper crust, bake in 400 degree preheated oven till crust is golden. Turn oven down to 350, bake additional 30 mind or so till apples are tender, and crust is golden brown.
