2 C. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs, slightly beaten
1 C. vegetable oil
1 1/2 C. sugar
1 tsp. vanilla
2 C. grated carrots
1/4 C. nuts, chopped
1 C. raisins (optional)

Directions:
Directions:
Preheat oven to 350ºF.
Sift flour, baking soda, cinnamon and salt together. In a mixing bowl, make a well in the mound of dry ingredients. Add the eggs, oil, sugar, vanilla, carrots, nuts and raisins.
Pour batter into a well greased loaf pan. Let stand about 20 minutes before baking. Bake about 60 minutes. Cool completely before slicing to prevent crumbling.

Waioli Tea Room is part of the Salvation Army in Manoa Valley. This used to be one of their most popular items from their bakery in the old days, when I was a kid (in the 60s and 70s).
