3-4 medium to large cucumbers
kosher salt
fresh ground pepper
vinegar
sugar

Directions:
Directions:
Thinly slice peeled cucumbers, place in a colander, sprinkle with kosher salt. Let set for 1 hour or longer, rinse well, drain well. Mix 3 parts vinegar to 1 part sugar (Tbs) in bowl with cucumbers. Add a few grinds black pepper, mix, let sit 4 hours or overnite. Adjust taste by adding salt, pepper, vinegar, and or sugar to taste. Let sit a few hours or longer taste and adjust as needed. The longer it can sit between tasting the better. The more you make this, the better you get.
