5-6 lbs. boneless pork butt shoulder
1 small or medium onion, chopped
1 1/2 t smoked paprika
2 t black pepper
1 t cayenne pepper (or more to taste)
1 t dried thyme (or fresh equivalent)
1 t dried thyme
1 t garlic powder
1/2 t salt
1 c water or broth
soft sandwich buns

Directions:

Trim the biggest fat parts from the pork roast.

Combine all seasonings in small bowl then rub all over the roast

Place meat and onion in a 6 quart slow cooker. Add water or broth. Cover and cook on low for 6-8 hours or on high for 4-5 hours or until pork is very tender.

Take out meat and let sit for a bit. Cut or pull meat apart, put it back into the slow cooker or a pot with a little broth and an optional jar of BBQ sauce.

Serve on the buns.

Gina (Cortese) uses just kosher salt and pepper and chopped garlic to season the meat, then adds BBQ sauce to taste. If you prefer less processed food, the seasonings in here are great - you might need to add a little extra broth.
