1 1/3 cup rice
1/2 envelope dry onion soup mix
1 can cream of mushroom soup
1 1/2 cup boiling water
1 lb. chicken breasts
1 1/2 cup dry sherry or white wine or chicken broth
2 T pimento, optional
salt, paprika, butter

Directions:
Directions:
In 1 1/2 quart casserole, combine all ingredients except chicken and seasonings. Brush breasts with butter. Season and place on top of rice mixture. Bake 1 hour 15 minutes at 350º
