2 tbsp dried thyme
1/2 tsp dried cumin
1/2 tsp dried all spice
1/4 tsp chilli powder
4 tsp olive oil.
4 large flour tortillas
200g cherry tomatoes halves
200g fresh mozzarella sliced and squeezed to remove the liquid
Mint leaves chopped not to fine.
Sea salt
Lemons to serve.

Pre heat the oven to 220 degrees
Mix all the dried spices and oil.
Brush the mixture onto the tortillas
Scatter over the tomatoes and cheese.
Sprinkle with salt.
Bake in the over for 4-5 minutes until the edges are crispy.
Serve with lemon.
