1 cup butter ,at room temperature
1 3/4 cups sugar
6 eggs ,at room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
¼ tsp baking soda
¼ tsp salt
½ cup sour cream
1 ½ cups mashed bananas ( about 3 medium bananas)
Confectioners' or icing sugar ,for dusting, optional

1. Preheat oven to 350°F. Grease and flour Bundt pan. Set aside.

2. In a large bowl, cream butter and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.

3. Whisk together the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition until fluffy.

4. Fold in mashed bananas.

5. Pour into prepared pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.
