Collard Greens Recipe

2 pounds collard greens, washed, stems removed, and cut into 2” pieces
1 tbls olive oil
4 slices of bacon
1 large onion, chopped
1 tsp salt
1 tsp black pepper
4 cloves of garlic, minced
3 cups chicken broth
1/4 tsp red pepper flakes

Directions:
Directions:
In a 4 quart stockpot, add the oil and fry the bacon until crisp. Remove, crumble and return to the pot.

Add the onions and cook over medium heat until translucent. Add the garlic and red pepper flakes. Cook til fragrant.

Add the collard greens and cook until they begin to wilt.

Add the chicken broth, salt, and black pepper.

Cover and let simmer for 45 minutes to an hour until the greens are tender. Adjust seasonings with salt or pepper as needed.
