2 c fresh corn kernels
3 T finely-diced red onion (I don't use this - allergic)
3 T finely-diced red pepper (sweet)
1/4 c lime juice
2 t minced jalepeno
2 T evoo
salt and pepper to taste.

12 fresh sea scallops

Directions:
Directions:
Blanch corn in boiling water for about 3-4 minutes, then drain. Combine the rest of the ingredients (up to scallops).

Lighlty oil and season the scallops and grill over a hot BBQ, taking care not to overcook (I actually prefer them more well-done). Spoon the corn salad onto appetizer plates and place scallops on top.
