1 c. Quick Oats
¾ c. Whole Wheat Flour
1 ½ tsp. Baking Powder
½ tsp. Ground Cinnamon
1 Large Banana (very ripe/frozen) (½ cup)
1 Egg, large
2 tbsp. Butter
6 tbsp. Brown Sugar
1 tsp. Vanilla Extract
½ c. Chocolate Chips

Line a large baking sheet with parchment paper/baking mat. In a medium mixing bowl, stir together the oats, whole wheat flour, baking powder and cinnamon. Set aside.

In a large mixing bowl mash the banana. Add the butter, egg, brown sugar and vanilla extract, and mix until very well combined (can use a hand mixer for this). The batter should be chunky and wet.

Add the dry ingredients to the wet ingredients. Mix until the flour disappears. Stir in the chocolate chips. The batter should be wet, somewhat loose and sticky. Scoop batter (about ¼ cup per cookie) onto cookie sheet in round mounds. Refrigerate for at least 2 hours to allow dough to firm up (allows to keep shape when baking).

When ready to bake, preheat oven to 350ºF. Place the cookie sheet in the oven directly from the refrigerator and bake for 10-13 minutes, until the cookies are dry set on the edges and feel set on top, and a toothpick inserted into the centre comes out clean. They will look and feel slightly underbaked. Let cool on the sheet for 10 minutes, then transfer to wire rack to finish cooking.
