1½ cup milk
4 eggs, slightly beaten
½ teaspoon salt
2 cups (8 ounces) shredded Swiss Cheese (May substitute sharp cheddar cheese)
2 tablespoons flour
1/2 pound ham (fully cooked)
1/2 pound (8 ounces chopped and sauteed mushrooms) - Optional
½ teaspoon black pepper or a touch of cayenne pepper
1 - 9 inch unbaked pastry shell

Directions:
Directions:
Heat oven to 350º.
Combine milk, eggs, and seasonings. Mix well.
Toss cheese with flour; add cheese mixture, ham, and mushrooms (if using mushrooms) to egg mixture.
Pour into unbaked pastry shell.
Bake at 350º 40 to 45 minutes.

This recipe is from my friend Cathy McGehee Jones. Cathy's mother and I worked together at the Lee County Department of Human Resources in Opelika, Alabama. Cathy's mother was Susan Mizelle McGehee. Mizelle was not her maiden name but a given name and her father called her Suzelle. I only mention this because there was a family connection but I never knew what it was. Cathy's parents were Babe and Suzelle McGehee from Auburn. Charles Whatley thought this was one of the best quiche I ever made. It is so simple and basic.
