Paula's House Seasoning

Drippings from 1 pound fried “black pepper bacon”
2 pounds smoked ham hocks
4 Tablespoons House seasoning (see below)
4 Tablespoons seasoned salt
4 Tablespoons hot pepper sauce
4 large bunches collard greens (or 4 bags frozen collards)
4 tablespoons butter
1 ½ to 2 cups sugar + to taste
1 teaspoon soda

PAULA DEEN’S HOUSE SEASONING:
1 cup salt
¼ cup black pepper
¼ cup garlic powder

Directions:
Directions:
In a large pot, bring 6 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for one hour. While ham hocks are cooking, wash the collard greens thoroughly. Remove the stems that run down the center by holding the sides of the leaf and stripping the leafs down from the middle stem if using fresh collards. (not necessary to clean if frozen). Place the greens in pot with meat. Add sugar, soda, butter, and bacon drippings. Cook 1-2 hours, stirring occasionally. As greens cook down, will need to add additional water. When done, taste and adjust seasoning.

For House seasoning:
Mix ingredients together and store in an airtight container for up to 6 months.

This recipe is included in memory and in honor of another favorite aunt, Hazel Akins Tillery. (I think the safest thing is to say they were all favorites.) And this recipe kind of reminds us of her because she could be a little sweet and sassy at times which made her even more endearing...(just realized that sweet and sassy must be hereditary because I know one of her granddaughters is the same way but I won't call names lol). The most memorable thing about Hazel and I bet everyone would say the same is her love for telling ghost stories and stories of things that happened growing up, like really scary stories even though no one else remembered them. Nevertheless, she said it happened and we believed her. Best. Story. Teller. Ever. Everyone would gather around her at Granny's house and each time she told a story it was just as good as the first time. She married Pete Tillery and together had four children. She had twins,but both died before the age of one. Her two daughters, Glenda and Shirley, were/are both remembered and loved for their sweet disposition and just as beautiful inside and out as well.... Glenda passed away several years ago and Shirley is still here on earth with us and recently celebrated her birthday with a big family get together. Good times / Sweet memories.
