½ cup butter
2 medium onions, chopped
1 medium green pepper, chopped
2 carrots, finely diced
2 stalks celery, finely diced
2 garlic cloves, crushed
1 19 oz tin tomatoes
10 ½ cups chicken broth
1 tsp garlic salt
½ tsp oregano
½ tsp pepper
pinch cloves
1 cup orzo
3 tbsp Worcestershire sauce
½ tsp dried mint

Directions:

Melt butter in a large pan or stock pot. Add vegetables and garlic and saute with lid on for 30 minutes. Stir occasionally,
Add tomatoes and cook 5 minutes.
Add chicken broth, garlic salt, oregano, pepper and cloves. Bring to a boil.
Add orzo and simmer 30 minutes.
Just prior to serving add Worcestershire and mint.

My mother in law worked with a lady whose family owned a Greek restaurant and she shared this recipe with her. It looks like a lot but is really easy and so good. I usually serve with cheese biscuit type bread which I will share as well.
