3 1/2 c all purpose flour
2 2/3 c sugar
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
4 large eggs
2 c mashed sweet potatoes
2/c granola oil
2/3 c 2% milk
1 1/2 c raisins
1 c chopped walnuts

Preheat oven to 350º.
1. In a large bowl, whisk first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, oil, and milk until blended. Add to flour mixture; stir just until moistened. Fold in raisins and walnuts.
2. Transfer to four greased 5 3/4 x 3 x 2 inch loaf pans. You can also use regular sized pans. Bake 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool.

To make larger loaves:
Prepare recipe as directed, using 2 greased 9 x 5 in loaf pas. Bake in preheated 350º oven for 55 to 60 minutes or until a toothpick comes out clean.
