3/4 c whipping cream
3/4 milk
1/4 c unsalted butter
2 cloves garlic, minced
1 T chopped fresh parsley
1 T chopped fresh thyme
1 T finely chopped sage
1 T finely chopped fresh rosemary
1 1/2 tsp salt
3/4 tsp black pepper
3 lb sweet potatoes, peeled and thinly sliced
1 1/2 c shredded Gruyere cheese

Preheat oven to 400º
1. Stir together milk, cream, butter and garlic in a small sauce pan. Bring to a simmer, remove from heat, stir in parsley, thyme, sage, rosemary, salt and pepper.
2. Arrange half of sweet potatoes in a lightly grease 9x13 basking dish. Pour half of cream mixture over top. Sprinkle with 3/4 c cheese. Arrange remaining slices of sweet potatoes in dish. Pour remaining cream mixtue over top and sprinkle with remaining cheese.
3. Cover with foil and bake 30 minutes. Uncover and continue baking until potatoes are tender and mixture is bubbly and golden brown, about 15 minutes. Let stand 10 minutes. If desired top with parsley, thyme, sage, and/or rosemary.
