1 boneless rump roast
3 large onions
2 Tablespoons butter
1/2 cup water
1 beef bullion cube
1 bay leaf (optional but nice to add if you have it)

Directions:
Melt butter in stockpot big enough to hold the roast. Generously salt and pepper all sides of the roast. Add the roast to the pot and brown until dark brown on all sides.

Add the water to the pot. There should be enough water to have a small amount in the bottom of the pot, you may have to add or subtract some to get the right amount.

Add bullion cube to the water, along with bay leaf. Peel the onions and cut in half. Add the onions to the pot.

Cover and simmer for 2-3 hours until the roast is tender when you stick a fork thru it. Check the roast every half hour or so. If there is too much water accumulating at the bottom of the pot, you can subtract some so that the onions are getting to be a nice dark brown color (or you can add water if it is low).

You can also use a bottom round roast but I prefer the rump roast.
