4 chicken breast cutlets, same size and thickness
Flour , salt and pepper
2 T. Veg. Oil
1/4 cup vodka
1/2 cup Low Sodium chicken broth
2 T. Lemon juice
1/2 cup chopped tomato
2 T. Heavy creme
1/3 cup minced scallions

Directions:
Directions:
Season cutlets with salt and pepper, and dust with flour. Sauté cutlets in oil over med-high heat. Flip cutlets when golden brown on first side. Cover pan and cook 1-2 minutes more. Transfer chicken to platter and pour off fat from pan.
Add vodka to pan -off heat to avoid spattering, then reduce vodka over the heat to deglaze pan until vodka is mostly gone. Add chicken broth and lemon juice to pan and reheat, returning cutlets to pan to cook 1 minute on each side. Place cutlets on warm plate.
Reheat the pan sauces and add 2 T. heavy creme and chopped tomato. Heat through and pour sauce over chicken. Garnish with minced green onion.
